Prep and cooking instructions:

1 medium yellow onion finely diced, 4 Tbls butter, 1 C granulated sugar, 1/2 C plain yellow mustard, 1 C apple juice, 2/3 C cidar vinegar, 1 lb blackberries (fresh or frozen), 1 Tbls chili powder, 2 tsp sea salt, 1/2 tsp ground black pepper Place diced and butter in a heavy bottomed 4 qt sauce pan. Heat over medium heat until onions are soft and translucent. Add sugar and cook for two minutes while stirring constantly. Add all remaining ingredients. Bring to a boil. Reduce heat and simmer for 10 minutes. Will yield 5 cups of sauce which enough to coat two 3 lb sides of salmon. When sauce is cool lightly coat both sides of salmon. Grill using an indirect method with foil to prevent sauce from scorching. Grill 15-20 minutes. When fish is cooked to desired temperature coat with remaining sauce and serve.(You can also cook this in a 350 degree oven for 20-30 minutes).
